El Paso Pork Tenderloin

Nice spicy pork tenderloin. Pork is marinated in chili powder, tabasco, oregano, rosemary, thyme, cumin, garlic and olive oil. Pork is grilled, cooled, sliced and served hot and spicy.
Ingredients -
1-1/2 pound Pork Tenderloin
5 teaspoons Chili Powder
1 teaspoon Tabasco Sauce
1 teaspoon Dried Oregano
1 teaspoon Dried Rosemary
1 teaspoon Dried Thyme
3/4 teaspoon Ground Cumin
2 cloves Garlic, crushed
1 tablespoon Olive Oil
 
Preparation:

1. Combine chili powder, tabasco sauce, oregano, rosemary, thyme, cumin, garlic and olive oil in large mixing bowl.

2. Place tenderloin in mixing bowl. Rub spice mixture over all surfaces of pork tenderloin.

3. Cover mixing bowl and refrigerate minimum 2 hours.

4. Preheat grill to medium heat.

5. Grill tenderloin 15 to 20 minutes, until internal temperature reads 160 F on meat thermometer.

6. Tenderloin is done when there is still a hint of pink in the center.

7. Remove from grill, allow to rest 10 minutes and slice to serve.

You could substitute 1 tablespoon each fresh herbs for the dried, if desired.
