Caramelized Pork Slices

Pork medallions and garlic sauteed with brown sugar, orange juice, and molasses. Seasoned with salt and pepper.
Ingredients -
1 pound Pork Tenderloin, cut into 1/2-inch slices
2 Garlic Cloves, finely chopped
2 tablespoons Packed Brown Sugar
1 tablespoon Orange Juice
1 tablespoon Molasses
1/2 teaspoon Coarse Salt
1/4 teaspoon Fresh Ground Black Pepper
 
Preparation:

1. Spray 10-inch skillet with non-stick cooking spray.

2. Heat over medium high heat.

3. Add pork slices and garlic to skillet. Cook 6-8 minutes stirring occasionally. Pork will be lightly browned and no longer pink.

4. Drain off excess liquid, if necessary.

5. Stir in brown sugar, orange juice, molasses, salt and pepper.

6. Continue cooking until mixture thickens and pork slices are nicely coated.

Pork Medallions
Pork tenderloin medallions are thick slices of the tenderloin. Sliced across grain 1 to 1-½ inches thick, the pieces are molded into rounds and sold separately. They are great on the grill, baked or broiled.
